OSSO BUCO TOM BRIDGE-STYLE

Preparation Method :
- Boil a pan of salted water, add the shin of beef, boil for 2 minutes and remove the beef. Discard the water.
- Dredge the pieces of beef with the seasoned flour.
- Heat the olive oil and butter in a pan and brown the beef pieces, adding the beef marrow, garlic and onion.
- Pour over the beef stock and wine.
- Add the tomato puree, stir it well, sprinkle with tarragon, cover and simmer for 3 hours .
- Season it with salt and pepper, and serve.

- 550 ml Basic Beef Stock
- 150 ml dry red wine
- 4 tablespoons tomato puree
- 1 tablespoon chopped fresh tarragon
- Salt and freshly ground black pepper (to taste)
