- Heat the oil in a large saucepan over medium heat. Add the onion, bell peppers, garlic, chorizo, and chicken pieces and sauté for about 10 minutes.
- Add the chillis and rice and stir well. Add the chilli powder, turmeric, and Cajun spices and mix in so the rice is well coated with the flavours. Pour in the chicken stock and bring to a simmer.
- Add the mixed vegetables and bring to a boil, then turn the heat down to a simmer. When the rice has been cooking for about 10 minutes, add the shrimp or crayfish.
- Simmer for 45 minutes more, until the chicken is very tender. Serve hot.

- 2 onions, chopped
- 5 mixed colored bell peppers, chopped
- 6 cloves garlic, finely chopped
- 6 chorizo sausages, thickly sliced
- 1.5 kg chicken pieces
- 2 hot chillis, 1 red, 1 yellow, chopped
- 750 grams rice
- 2 teaspoon chilli powder
- 4 tablespoons turmeric
- 4 tablespoons Cajun spices
- 750 ml chicken stock
- 750 grams chopped mixed vegetables
- 750 grams large shrimp
- Salt and freshly ground black pepper
