LAMB WITH YOGURT

Preparation Method :
- Melt the ghee in a heavy-based frying pan and fry half of the onions until soft. Remove from the pan with a slotted spoon and set it aside.
- Increase the heat, add the meat and saute until it is sealed on all sides.
- Remove the meat from the pan and set aside.
- Add the chilli powder, ginger, salt and the remaining onions to the pan, then stir in the yogurt.
- Cook for about 3-5 minutes, then add in the. Cover and cook at least for 10-12 minutes.
- Add the garlic, cardamom seeds, garam masala, ground cumin seeds and the browned onions.
- Cover and simmer for 20-25 minutes or until the lamb is tender.
- Add little water if needed and serve hot.
INGREDIENTS
- 500 grams boned shoulder of lamb, cut into small cubes
- 250 grams natural yogurt
- 100 grams ghee
- 500 grams onions, sliced
- 1 teaspoon garam masala
- ½ teaspoon cumin seeds, dry-roasted and ground
- 2-3 garlic cloves, crushed
- 4-5 cardamom seeds
- 1 teaspoon chilli powder
- 1 teaspoon ground ginger
- Salt, to taste
