LAMB WITH OKRA AND TOMATOES

Preparation Method :

  • Heat a wok, then heat the vegetable oil over a moderate heat.
  • Add the onion, garlic, coriander, turmeric and chilli powder, stir-fry for about 2 minutes or until the onion is softened.
  • Add the lamb strips to the wok and stir-fry for about 5 minutes or until the lamb is browned all over.
  • Add the tomatoes and stir-fry for 2-3 minutes, then add in the lemon rind and juice with sugar and salt to taste.
  • Stir-fry, add the okra and toss at least for 3-5 minutes or until heated through. Serve hot.

INGREDIENTS

  • 550 grams lamb fillet, cut into thin strips
  • 225 grams ripe tomatoes, skinned and roughly chopped
  • 225 grams small okra, trimmed, blanched, rinsed and drained
  • 1 tablespoon ground coriander
  • 50 ml Cooking oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, crushed
  • ½ teaspoon caster sugar
  • 1 teaspoon ground turmeric
  • Finely grated rind and juice of ½ lemon
  • Hot chilli powder and Salt, to taste
