LAMB WITH OKRA AND TOMATOES

Preparation Method :
- Heat a wok, then heat the vegetable oil over a moderate heat.
- Add the onion, garlic, coriander, turmeric and chilli powder, stir-fry for about 2 minutes or until the onion is softened.
- Add the lamb strips to the wok and stir-fry for about 5 minutes or until the lamb is browned all over.
- Add the tomatoes and stir-fry for 2-3 minutes, then add in the lemon rind and juice with sugar and salt to taste.
- Stir-fry, add the okra and toss at least for 3-5 minutes or until heated through. Serve hot.

- 225 grams ripe tomatoes, skinned and roughly chopped
- 225 grams small okra, trimmed, blanched, rinsed and drained
- 1 tablespoon ground coriander
- 50 ml Cooking oil
- 1 onion, thinly sliced
- 2 garlic cloves, crushed
- ½ teaspoon caster sugar
- 1 teaspoon ground turmeric
- Finely grated rind and juice of ½ lemon
- Hot chilli powder and Salt, to taste
