Preparation Method :
- Blend the garlic, ginger, green chillies, coriander seeds, cumin seeds, mint, fresh coriander with little yogurt to a paste.
- Heat half the quantity of oil in a pan, add 1 chopped onion and fry until golden.
- Add the lamb and half of the yogurt. Stir well, cover and cook for about 20-22 minutes.
- Heat the remaining oil in a large pan, add the spices and fry for a minute.
- Add the remaining onion and the garlic mixture and fry for about 3-5 minutes, stirring constantly.
- Add the lamb and yogurt mixture, adjust seasoning with salt. Cover and cook for about 10-12 minutes.
- Add the almonds and cook for further 8-10 minutes or until the meat is tender. Serve garnished with flaked almonds.

- 750 grams boned leg of lamb, cubed
- 225 grams yogurt
- 50 ml Cooking oil
- 2 onions, finely chopped
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 2-3 garlic cloves
- 1 inch piece fresh root ginger
- 2-3 green chillies
- 5-6 cardamom pods
- 5-6 cloves
- 1 inch piece cinnamon stick
- Fresh mint leaves, chopped
- Fresh coriander, chopped
- Salt, to taste
- 150 grams flaked almonds, plus extra to garnish
