Preparation Method :
- Fill a large pot with cold water. Add the onions, celery, carrot, peppercorns, and salt. Bring to a boil over medium-high heat.
- Add the beef, and when the water has returned to a boil, decrease the heat a little and cover. Simmer for 1 hour.
- Add the veal, chicken, and tongue. Simmer for 1 hour, adding boiling water to cover the meats. Add the potatoes and remaining carrots.
- Simmer until the meat and potatoes are very tender, about 1 hour.
- Cook the sausage separately following the instructions on the package. Drain and serve the meats and vegetables on a large heated serving platter.
