FRICADELLES WITH PIQUANT SAUCE

This dish is made in lea minced beef, salt and freshly ground pepper, fresh breadcrumbs, butter, softened, grated horseradish, chopped chives, little oil, tablespoon lemon juice, beef stock and soured cream. Preparation Method :
- Place the meat in a bowl, season with salt and pepper, and mix in the breadcrumbs.
- Cream together the butter, horseradish and chives and combine gently with the meat. Shape into 4 patties.
- Heat enough oil in a heavy-based frying pan to give just a thin film over the base. Cook the fricadelles over a high heat for about 3 minutes on each side, or until well browned outside but still a little pink inside.
- Transfer to a heated platter and keep warm while you make the sauce.
- Add the lemon juice and stock to the pan and stir well to mix in the brown bits from the base of the pan.
- Cook over a high heat until reduced by about half. Stir in the cream and heat gently, but do not boil. Taste for seasoning, spoon over the patties.
- Serve with Onion Mash and a mixed salad.

- 1 kg lean minced beef

- 500 grams fresh breadcrumbs
- 50 grams butter, softened
- 2 tablespoon grated horseradish
- 2 tablespoon chopped chives
- Little Cooking oil
- 2 tablespoon lemon juice
- 250 ml beef stock
- 8 tablespoons soured cream
