BEEF 'N' BEER

The beer ‘n’ beer is combined with perfect ingredients that suite to your daily meals. It mainly consists of button mushroom, double cream, rump steak and other seasonings. This dish is not an ordinary meat recipe because of its aroma and delectable taste.

Preparation Method :

  • Preheat the oven to Gas Mark 4/180°C/350°F.
  • Cut the beef into large cubes, remove gristle or fat.
  • Heat the dripping in a flameproof casserole, add the beef and brown all over for about 4-5 minutes.
  • Remove the meat with a slotted spoon and place on one side.
  • Add the onions and mushrooms and cook for 3 minutes.
  • Return the meat to the casserole, sprinkle with the seasoned flour and cook for 2 minutes.
  • Add sugar, vinegar, bouquet garni, thyme, beef stock and brown ale, stir it for 4 minutes.
  • Season it with salt and pepper, add the mustard, cover with cooking foil and then a tight-fitting lid and cook in the centre of the oven for 3 hours.
  • Remove the lid and foil, let the casserole stand for 5 minutes, then stir and pour a large swirl of double cream around the top.
  • Garnish it with sprig of thyme and serve.

INGREDIENTS

  • 1 kg rump steak
  • 75 grams beef dripping
  • 4 large onions, peeled and sliced
  • 275 grams button mushrooms, wiped and sliced
  • 50 grams flour, seasoned
  • 1 tablespoon soft brown sugar
  • 2 tablespoons tarragon vinegar
  • 1 bouquet garni
  • 1 teaspoon crushed fresh thyme
  • 275 ml Basic Beef Stock
  • 575 ml Newcastle brown ale
  • Salt and freshly ground black pepper (to taste)
  • 1 tablespoon English mustard
  • 150 ml double cream
  • A sprig of fresh thyme
