SMOKED SAUSAGE WITH HOT POTATO SALAD

Preparation Method :
- Place the sausage in a saucepan, cover with water, bring to the boil and simmer to low flame for about 20 - 25 minutes.
- Salad: Boil the potatoes in water with a pinch of salt for 20 minutes or until tender. Drain and set it aside to cool. Cut into thick slices and place in a bowl.
- Place vinegar, mustard, salt and black pepper to taste in a small bowl and whisk to combine. Slowly whisk in oil and continue to whisk to make a thick dressing.
- Pour dressing over warm potatoes, sprinkle with parsley and spring onions. Toss gently to combine and spoon onto a serving platter.
- Skin sausage, cut into thick slices and arrange on platter with salad. Serve with extra mustard, dill pickle and crusty bread.

- 1 large spicy German or Dutch smoked sausage

- 100 ml olive oil
- 4 large, old potatoes, scrubbed and halved
- 2 tablespoon wine vinegar
- 1 tablespoon Dijon mustard
- 3 tablespoon finely chopped fresh parsley
- 4 spring onions, finely chopped
- Freshly ground black pepper and Salt, to taste
