SAUSAGE FRITTATA

Preparation Method :

  • Heat the vegetable oil in a frying pan, add the onion and fry gently for about 5-7 minutes or until soft and lightly golden.
  • Add the potatoes and fry until they are just begin to colour, turn them frequently.
  • Add the sausage and stir-fry at least for a minute, then stir in the peas.
  • Beat the eggs in a bowl with salt and pepper to taste.
  • Pour the mixture into the frying pan, reduce the heat and leave the frittata to cook, without stirring, until the egg is just beginning to set at the edges.
  • Sprinkle the top of the frittata with the grated cheese and paprika.
  • Slide the frying pan under a preheated hot grill and leave until the top of the frittata is golden and bubbly.
  • Carefully ease the egg away from the sides of the pan and slide the frittata on to a serving dish.
  • Cut into wedges and serve accompanied by mixed salad leaves.

INGREDIENTS

  • 225 grams Dutch smoked sausage, sliced
  • 150 grams Cheddar cheese, grated
  • 150 grams frozen peas
  • 2 potatoes, boiled and diced
  • 100 ml Cooking oil
  • 2 small onions, sliced
  • 6 eggs, lightly beaten
  • Paprika, Salt and pepper to taste
  • Mixed salad leaves, to serve
