Preparation Method :
- Heat the vegetable oil in a frying pan, add the onion and fry gently for about 5-7 minutes or until soft and lightly golden.
- Add the potatoes and fry until they are just begin to colour, turn them frequently.
- Add the sausage and stir-fry at least for a minute, then stir in the peas.
- Beat the eggs in a bowl with salt and pepper to taste.
- Pour the mixture into the frying pan, reduce the heat and leave the frittata to cook, without stirring, until the egg is just beginning to set at the edges.
- Sprinkle the top of the frittata with the grated cheese and paprika.
- Slide the frying pan under a preheated hot grill and leave until the top of the frittata is golden and bubbly.
- Carefully ease the egg away from the sides of the pan and slide the frittata on to a serving dish.
- Cut into wedges and serve accompanied by mixed salad leaves.

- 225 grams Dutch smoked sausage, sliced
- 150 grams Cheddar cheese, grated
- 150 grams frozen peas
- 2 potatoes, boiled and diced
- 100 ml Cooking oil
- 2 small onions, sliced
- 6 eggs, lightly beaten
- Paprika, Salt and pepper to taste
- Mixed salad leaves, to serve
