CHICK PEAS WITH TOMATOES AND SAUSAGES
This dish is good for main course. Chick peas with tomatoes and sausages are prepared by cooking chick peas, pork sausages, and lean bacon. To spice up the flavour, combine it with the remaining ingredients. Although it’s kind of hard preparing this kind of dish, the taste is really good.

- Drain the chick peas, place in a saucepan and add fresh cold water to cover.
- Simmer, covered, for about 1 hour. Prick the sausages and brown in a frying pan.
- Remove and cut into 1 inch pieces. Set aside.
- Blanch the bacon in boiling water for 1 minute, then drain.
- Brown the bacon, onion, garlic and green pepper in the frying pan, stirring.
- Add the tomatoes, spice, thyme, salt and pepper. Cover and cook over low heat for 10 minutes. Fold in the sausage pieces.
- Drain the chick peas, reserving liquid. Turn into a lightly greased ovenproof baking dish and cover with the tomato and sausage mixture.
- Moisten with the reserved liquid. Cover and bake in a preheated moderately hot oven for about 1 ½ hours, stirring from time to time.
- Serve in wide soup plates.

- 500 grams chick peas, soaked overnight
- 500 grams low-fat pork sausages
- 300 grams lean bacon, derinded and diced
- 2 large onion, peeled and finely chopped
- 4 cloves garlic, peeled and chopped
- 2 large green pepper, cored, deseeded and diced
- 8 large ripe tomatoes, skinned, deseeded and chopped
- Grated nutmeg or cinnamon
- 1 teaspoon dried thyme
- Salt
- Freshly ground black pepper
