SLOW ROAST BEEF WITH LIME & CORIANDER
The slow roast beef with lime and coriander is cooked with silverside of beef, beef dripping, lime juice, beef stock and other tasty ingredients that enrich its taste. Because of its combined lime and coriander, the dish looks more delicious and luscious.

- Preheat the oven to Gas Mark 7/220°C/425°F.
- Season the beef generously with salt and pepper. Heat the dripping in a large ovenproof casserole and sear the meat all over until it is brown.
- Add the rest of the ingredients, except the flour and coriander leaves and cook in the centre of the oven for 15 minutes.
- Lower the heat to Gas Mark 2/150°C/300°F and continue to cook for 3 hours.
- Thicken the stock/sauce with a little flour if you wish, garnish it with the fresh coriander leaves, and serve.
INGREDIENTS
- 1.5 kg rolled silverside of beef
- Salt and freshly ground black pepper (to taste)
- 50 grams of beef dripping
- 2-3 onions, peeled and thickly sliced
- 250 grams of carrots, peeled and thickly sliced
- 4 tablespoons lime juice
- 1 teaspoon ground coriander
- 200 ml Basic Beef Stock
- 200 ml Guinness
- A little flour if needed
- A few fresh coriander leaves
