ROASTED LAMB WITH VEGETABLES

Preparation Method :
- Preheat the oven to 350°F (180°C/gas 4). Sauté the onions in oil in a large frying pan over medium heat until softened, 3-4 minutes. Add the lamb and brown all over, 10 minutes.
- Transfer to a roasting pan. Add the tomatoes and potatoes. Season with salt and pepper and sprinkle with the rosemary.
- Drizzle with the remaining oil. Roast until the lamb and potatoes are cooked, about 50 minutes. Serve hot.
INGREDIENTS
- 6 large onions, coarsely chopped
- 6 tablespoons sesame oil
- 2 kg leg or shoulder of lamb, cut into 6-8 pieces
- 15 cherry tomatoes
- 500 grams potatoes, peeled and cut into slices
- Salt and freshly ground black pepper
- Sprigs of fresh rosemary

This dish my grandchildren have been craving for a long time and I see, I made. They even gave up playing their favorite diggy and went to eat right away and ate very well.
