ROAST STRIPS OF BEEF
Roast strips of beef with sweet shallots and brandy cream – the best meat recipe for all! This dish is cooked with sirloin of beef, good-quality brandy, beef stock and other seasoning. If you want to prepare this dish, simply follow its cooking ingredients and instructions.

- Preheat the oven to Gas Mark 6/200°C/400°F.
- Dredge the beet strips in the seasoned flour, shake off the excess flour and reserve.
- Melt the butter and olive oil in a large casserole and brown the sirloin strips for 3-5 minutes.
- Add the shallots and honey and cook for another 5 minutes.
- Sprinkle over the leeks, carrot, celery and left-over flour, and cook for 3 minutes.
- Add the beef stock, tomato juice, puree and brandy, and cook for a further 6 minutes.
- Cover and place the casserole in the oven for atleast 45 minutes.
- Add the creme fraiche, parsley, salt and pepper, and serve.
INGREDIENTS
- 750 grams sirloin of beef, trimmed and cut into strips
- 50 grams seasoned flour
- 50 grams of butter
- 4 tablespoons olive oil
- 20 shallots, peeled
- 3 tablespoons clear honey
- 75 grams leeks, washed and shredded
- 75 grams carrot, peeled and diced
- 50 grams celery, washed and diced
- 275 ml Basic Beef Stock
- 150 ml pure tomato juice
- 1 tablespoon tomato puree
- 50 ml good-quality brandy
- 200 ml creme fraiche
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper (to taste)
