ROAST SIRLOIN OF ENGLISH BEEF IN AN OVERCOAT
Deciding to prepare roast sirloin of English Beef in an overcoat is never been so tough. This dish is easy to prepare and promotes excellent daily servings for the whole family. With a single bite, you will surely tempt to try more servings.

Preparation Method :
- Preheat the oven to Gas Mark 4/180°C/350°F.
- Coat the beef with the butter and roast in the centre of the oven for 90 minutes, basting every 15 minutes.
- At the end of the cooking time, mix the rest of the ingredients together and use to coat the sirloin.
- Return to the oven and bake at Gas Mark 6/200°C/400°F for a further 20 minutes, until the overcoat is crisp and brown.
- Allow the beef to rest for 10 minutes before you slice it.
INGREDIENTS
- 1.3 kg sirloin of beef, boned, trimmed and rolled
- 50 grams of butter
- 150 grams breadcrumbs
- 200 grams onions, peeled and chopped
- 1 tablespoon chopped fresh parsley
- 1 tablespoon crushed fresh rosemary leaves
- 1 teaspoon coarse salt
- Freshly ground black pepper (to taste)
- 1 tablespoon clear honey, warmed
- 1 teaspoon grain mustard
