ROAST RIB OF BEEF WITH ROSEMARY POTATOES
Try out the new roast rib of beef with rosemary potatoes. This mouth-watering dish completely changes your appetite because of its palatable ingredients like beef dripping, roasting potatoes, butter and other tasty seasonings. Every piece of meat is extremely delicious and you will surely crave for more bite.

- Preheat the oven to Gas Mark 9/250°C/475°F.
- Heat some dripping in a roasting tin, add the potatoes, and sprinkle with salt, pepper and rosemary. Cook and seal for 10 minutes.
- Place a roasting rack in the bottom of another roasting tin. Place the rib on the rack.
- Pour the beef stock over the rib and into the roasting tin.
- Sprinkle the rib generously with salt and pepper.
- Cook the rib for 20 minutes. Then reduce the heat to Gas Mark 7/220°C/425°F, and roast according to your taste.
- Roast the tray of potatoes with rosemary for 1 hour, and serve decorated with the fresh sprigs of rosemary.
- Turn the meat and baste every 12 minutes at least, during the cooking time.
- Pour the juices from the beef into a saucepan, making sure you get all the goodness from the bottom of the roasting tin.
- Boil until reduced by one-third. Add the butter, whisking it in well, pour into a sauceboat and serve.

- A little beef dripping
- 1 kg of small roasting potatoes, peeled
- Salt and freshly ground black pepper (to taste)
- 1 tablespoon fresh rosemary leaves, crushed
- 1.3 kg rib of beef on the bone
- 150 ml Basic Beef Stock
- 3 sprigs of fresh rosemary
- 50 grams of butter
