ROAST BOMBAY BEEF & POTATOES
Finding for an ideal meat recipe is extremely so easy with roast Bombay beef and potatoes! This dish is filled with perfect ingredients that really fit to your food cravings. Every piece of beef is tendered with delicious taste and juicier fillings.

- Preheat the oven to Gas Mark 7/220°C/425°F.
- Heat the butter, oil and dripping in a large roasting tin.
- Seal the beef all over by cooking for about 5 minutes.
- Remove the beef and set on one side.
- Add the bacon, cook for atleast 3 minutes, then add the rest of the ingredients, except the jacket potatoes, seasoning and arrowroot, blending the mixture well.
- Place the beef back in the roasting tin and cook all over again.
- Cover with foil and bake in the centre of the oven for 80 minutes, basting every 15 minutes.
- Remove it from the cooking foil.
- Add the diced jacket potatoes all around the sirloin, covering them with the curry juices.
- Season with the salt and pepper and return to the oven for 1hour.
- Remove the sirloin and the potatoes.
- Pour the sauce into a saucepan and thicken with a little arrowroot.
- Slice the beef and serve with the curry sauce and Bombay potatoes.
INGREDIENTS
- 75 grams butter
- 4 tablespoons Sesame oil
- 50 grams beef dripping
- 1.5 kg sirloin of beef
- 250 grams smoked bacon, chopped
- 1 tablespoon fresh rosemary leaves, chopped
- 2 large red onions, peeled and diced
- 3 tablespoons mild curry paste
- 1 tablespoon mango chutney
- ½ teaspoon garam masala
- 200 grams sultanas
- 3 large baking apples, cored, peeled and diced
- 12 potatoes, baked in their jackets and diced into 5cm cubes
- Salt and freshly ground black pepper (to taste)
- A little arrowroot

You helped me have a perfect dinner with family and friends on basketball stars. I really like this dish, but I have never cooked it as good as in a restaurant.
