POT ROAST SILVERSIDE OF BEEF PORTUGUESE

Preparation Method :

Preheat the oven to Gas Mark 4/180°C/350°F.
Dredge the silverside in the seasoned flour, heat the dripping in a large frying pan and brown the meat all over.
Place the beef in a large casserole with a lid.
Add the rest of the ingredients, cover and pot roast in the centre of the oven for 3 hours.
Transfer the silverside to a warm serving dish and then slice it thin
Spoon the juice and other ingredients over the beef, and serve.

INGREDIENTS

1.5 kg silver side of beef, boned and rolled
Seasoned plain flour
50 grams beef dripping
2 cloves garlic, peeled and crushed
6 anchovies, crushed
Juice of 1 lemon
200 grams chopped tomatoes
1 tablespoon tomato puree
Salt and freshly ground black pepper (to taste)
125 grams pitted green olives, washed and sliced
2 red peppers, de-seeded and sliced
175 ml Basic Beef Stock
