POT ROAST SILVERSIDE OF BEEF SEVILLE

Preparation Method :

  • Preheat the oven to Gas Mark 4/180°C/350°F.
  • Dredge the silverside in the seasoned flour, heat the dripping in a large frying pan and brown the meat all over.
  • Place the meat in a large casserole with a lid.
  • Add rest of the ingredients, cover and pot roast in the centre of the oven for atleast 3 hours.
  • Transfer the silverside to a warm serving dish and then slice it.
  • Discard the cinnamon stick, spoon the juice and other ingredients over the beef, and serve.

INGREDIENTS

  • 1.5 kg silverside of beef, boned and rolled
  • Seasoned plain flour
  • 50 grams of beef dripping
  • 4 cloves garlic, peeled and crushed
  • Juice of 1 lemon
  • 150 ml Amontillado sherry
  • Salt and freshly ground black pepper (to taste)
  • 1 cinnamon stick
  • 100 grams pitted green olives, washed and sliced
  • 2 red peppers, de-seeded and sliced
  • 150 ml Basic Beef Stock
