Preparation Method :
- Preheat the oven to Gas Mark 4/180°C/350°F.
- Dredge the rib of beef in the seasoned flour, heat the dripping in a large frying pan and brown the meat all over.
- Place the meat in a large casserole with a lid.
- Add the rest of the ingredients, cover and pot roast in the centre of the oven for 3 hours.
- Transfer the rib to a warm serving dish and slice, spoon the juice and other ingredients over the beef, and serve.
INGREDIENTS
- 1.3 kg rib of beef, boned and rolled
- Seasoned plain flour
- 25-30grams beef dripping
- 3 cloves garlic, peeled
- 2 tablespoons chilli powder
- 1 teaspoon fennel seeds, crushed
- 1 teaspoon mild curry powder
- 2 tablespoons Vermouth
- Juice of 1 lemon
- 200 grams spiced garlic sausage, diced
- 200 grams shallots, peeled and sliced
- 1 tablespoon tomato puree
- Salt and freshly ground black pepper (to taste)
- 2 red peppers, de-seeded and sliced
- 175 ml Basic Beef Stock
- 4-5 tablespoons creamed coconut
