BEEF WITH CURRIED ROSEMARY

- Preheat the oven to Gas Mark 4/180°C/350°F.
- Place a roasting rack in the bottom of a large roasting tin.
- Place the rib on the rack. Pour the beef stock over the rib and into the roasting tin.
- Sprinkle the rib generously with salt and pepper.
- Roast the rib for 20 minutes, then reduce the heat to Gas Mark 4/180°C/350°F minus 30 minutes from your calculated cooking time,
- Meanwhile, place all the stuffing ingredients in a bowl and mix altogether.
- Divide the mixture into 10 generous balls.
- Place the stuffing balls on a baking tray and cook for the last 30 minutes of the roasting time.
- Remove the joint from the oven and brush melted butter all over the surface.
- Cook for the final 30 minutes and present the joint on a large serving dish with the stuffing balls. Make some Onion Gravy, using the beef juices, and serve in a sauceboat.
INGREDIENTS
- 1.5 kg rib of beef
- 5 fl oz Basic Beef Stock
- Salt and freshly ground black pepper (to taste)
- 50 grams of butter
For the stuffing
- 150 grams fresh breadcrumbs
- 4 tablespoons finely chopped fresh parsley
- 50 grams calves' liver, roughly chopped
- 150 grams button mushrooms, roughly chopped
- 2 cloves garlic, peeled and crushed with a little olive oil
- 1 onion, peeled and finely chopped
- 1 teaspoon mild curry powder
- 1 teaspoon fresh rosemary leaves, crushed
- Salt and freshly ground black pepper (to taste)
- 1 egg, beaten
