Preparation Method :
- Prepare the pie crust. Heat the oil in a large pan over medium heat and sauté the onion and garlic until softened, 5 minutes.
- Toss the steak in the flour and season with salt and pepper. Add to the pan and sauté until browned, 10 minutes.
- Add the thyme, bay leaf, ale, stock, mustard, and Worcestershire sauce. Simmer until the meat is tender, about 2 hours. Discard the bay leaf and thyme.
- Preheat the oven to 425°F (220°C/gas 7). Prepare the pies following the instructions for the meat pies on the facing page.
- Bake for 20 minutes, until the pastry is puffed and golden brown. Serve hot with ketchup.

- 4 onions, finely chopped
- 5 garlic cloves, finely chopped
- 1 kg braising steak, cut into small chunks
- 4 tablespoons all-purpose (plain) flour
- Salt and freshly ground black pepper
- 5 sprigs of fresh thyme
- 2 fresh bay leaf
- 500 ml dark ale
- 500 ml beef stock
- 4 teaspoons English mustard
- 4 tablespoons Worcestershire sauce
- Ketchup to serve
