LAMB AND VEGETABLE PIE

A lot of kids are hesitant eating vegetable dishes. But when you prepare this healthy meal during ordinary dinner at home, it is a hundred per cent guaranteed that your kids will now enjoy eating vegetable dishes.

Preparation Method :

Heat the butter in a pan and brown the meat. Sprinkle with the flour, stir well, and then cover with stock or water.
Add bay leaf, season with salt and pepper, then cover and simmer for 30 minutes. Add the tomato, onions, carrots and turnip.
Replace the lid and continue cooking over a low heat for 30 minutes.
Stir in the peas, mint and parsley and cook for 10 minutes longer. Pour into a pie dish and leave to cool.
Make Creamy Mashed Potatoes as in recipe and beat in the egg. Pipe' or spoon the potato on to the meat, dot with butter and cook in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 20 minutes.
Serve immediately.

INGREDIENTS

50 gram butter
500 gram boneless lamb, cut from shoulder or leg, cubed
2 tablespoon plain flour
Stock or water to cover
2 bay leaves
Salt and freshly ground pepper
2 large tomato, skinned and chopped
12 button onions, peeled
4 carrots, halved
1 turnip, diced
100 gram shelled peas
2 teaspoon chopped fresh mint
2 tablespoon chopped parsley
Creamy Mashed Potatoes
A little extra butter
