BEEF & APRICOT PIE

Be prepared and see how beef and apricot pie changes your appetite! This dish completely served several people and excellent for any events. It is coalesced with perfect ingredients like fresh sage, puff pastry and alike that really fit to your preferences and everyday menu.

1 hour 20 minutes

Preparation Method :

  • Preheat the oven to Gas Mark 4/180°C/350°F.
  • Combine all the filling ingredients in a mixing bowl and set on one side.
  • Roll out the pastry, pat two-thirds of it into the base and sides of a 1.4 litre loaf tin, greased and lined with greaseproof paper.
  • Distribute it evenly to leave space for the filling.
  • Place in the filling. Make a lid with the remaining pastry, cover the pie and seal the edges, using any pastry trimmings to decorate the top.
  • Glaze it with the egg.
  • Make a large hole in the centre of the lid.
  • Bake for 90 minutes and allow to cool for 3 hours.
  • Make up the aspic jelly with the warm apple juice, cool for 10- 15 minutes, then pour the aspic through the hole in the top of the pie.
  • Chill the pie for 3 hours, then remove from the tin, slice with a warm carving knife, and then serve.

INGREDIENTS

  • 1 quantity Hot Water Pastry
  • 1 egg, beaten with a little milk
  • 3 tablespoons powdered aspic
  • 280 ml  clear apple juice, warmed

For the filling

  • 500 grams lean minced beef
  • 225 grams minced bacon
  • 250 grams chopped apricots
  • 1 teaspoon finely chopped fresh sage
  • A pinch of dried or fresh mixed herbs
  • 1 onion, peeled and finely chopped
  • 4 tablespoons oatmeal
  • 2 tablespoons brandy
