TOURNEDOS A LA BEARNAISE

Preparation Method :
- Season the steaks, heat the dripping in a large frying pan and cook the steaks. Place them on a warm serving plate.
- Fry the rounds of bread in the dripping until they are crisp on both sides.
- Place them on a large hot serving plate, place a tournedos on each round of bread.
- Pour over a little of the Bearnaise Sauce, sprinkle with chopped parsley and then serve.
INGREDIENTS
- 1.5 kg fillet of beef, cut into 5cm slices
- Freshly ground black pepper and Salt
- 30 grams beef dripping
- 8-12 rounds of bread the same size and shape as the fillets
- 1 quantity Bearnaise Sauce (below)
- Chopped fresh parsley
