PAN-FRIED GARLIC AND CHILLI LAMB

Preparation Method :
- Heat the fat in a heavy-based shallow frying pan and add the whole spices and garlic, fry for about 20-30 seconds.
- Add in the lamb and a pinch of salt. Seal the lamb for a few minutes, then add a few cups of water and stir.
- Cover and cook, stirring occasionally, for 30-35 minutes or until the lamb is tender and the water has evaporated.
- Remove from the heat, mix in the ground spices with little water. Serve on a bed of shredded lettuce.
- Serve hot with Naan bread and Steamed Rice.
INGREDIENTS
- 750 grams lean boneless leg of lamb, cut into bite- sized pieces
- 2 tablespoons Cooking oil
- 2 teaspoon butter
- 2-3 garlic cloves, crushed
- Salt, to taste
- 2 little gem lettuces, finely shredded, to serve
- Fresh coriander, chopped Green and red chillies, finely sliced
Whole Spices
- ½ teaspoon cumin seeds
- 2-3 cardamom pods, crushed
- 1-2 bay leaves
- 2-3 cloves, finely ground
Ground Spices
- ½ teaspoon garam masala
- ½ teaspoon ginger
- ½ teaspoon chilli
