PAN-FRIED GARLIC AND CHILLI LAMB

Cooking Time :
35 minutes

Preparation Method :

  • Heat the fat in a heavy-based shallow frying pan and add the whole spices and garlic, fry for about 20-30 seconds.
  • Add in the lamb and a pinch of salt. Seal the lamb for a few minutes, then add a few cups of water and stir.
  • Cover and cook, stirring occasionally, for 30-35 minutes or until the lamb is tender and the water has evaporated.
  • Remove from the heat, mix in the ground spices with little water. Serve on a bed of shredded lettuce.
  • Serve hot with Naan bread and Steamed Rice.

INGREDIENTS

  • 750 grams lean boneless leg of lamb, cut into bite- sized pieces
  • 2 tablespoons Cooking oil
  • 2 teaspoon butter
  • 2-3 garlic cloves, crushed
  • Salt, to taste
  • 2 little gem lettuces, finely shredded, to serve
  • Fresh coriander, chopped Green and red chillies, finely sliced

Whole Spices

  • ½ teaspoon cumin seeds
  • 2-3 cardamom pods, crushed
  • 1-2 bay leaves
  • 2-3 cloves, finely ground

Ground Spices

  • ½ teaspoon garam masala
  • ½ teaspoon ginger
  • ½ teaspoon chilli
