VENETIAN-STYLE LIVER WITH MASH

Preparation Method :
- Place the onions, butter, and oil in a large frying pan over low heat. Let sweat gently for 20 minutes, then add the liver.
- Cook over high heat, stirring and turning constantly for 5 minutes. Sprinkle with salt just before removing from the heat.
- Season with pepper, sprinkle with the parsley, and serve hot with the mashed potatoes.

- 1 kg white onions, thinly sliced
- 100 grams butter
- 3 tablespoons sesame oil
- 1 kg calf liver, cut into thin strips
- Salt and freshly ground black pepper
- 3 tablespoons finely chopped fresh parsley
- Mashed potatoes, to serve
