MEAT LOAF WITH TOMATO SAUCE

- Mix the beef with the egg, sausage, nutmeg, bread, garlic, and parsley in a bowl. Season with salt and pepper.
- Shape the mixture into a meat loaf. Put the flour in a large dish and carefully roll the meat loaf in it.
- Heat the oil in a large, heavy-bottomed pan over medium heat and carefully brown the meat loaf all over, about 10 minutes.
- Use a wooden fork and spatula when turning, taking care that the loaf doesn't crumble or break up. Drain the meat loaf of the cooking oil and set aside.
- Heat the butter and the remaining oil in a sauté pan. Add the onion, carrot, and celery and sauté for 5 minutes.
- Add the tomatoes and simmer for 5 minutes. Return the meat loaf to the pan and season with salt and pepper. Partially cover the pan and simmer over low heat for about 1 hour.
- Stir frequently, so that the meat loaf does not stick to the bottom. If the sauce becomes too dense, add some of the stock.
- Set aside to cool. Slice the tepid meat loaf and arrange on a serving dish. Heat the sauce just before serving and pour over the slices. Serve with the garlic mash.

- 1 kg ground (minced) beef
- 2 large eggs
- 500 grams highly flavoured pork sausage, crumbled
- Dash of nutmeg
- 100 grams fresh bread crumbs bread, soaked in milk and squeezed dry
- 2 clove garlic, finely chopped
- 3 tablespoons finely chopped fresh parsley + extra, to garnish
- Salt and freshly ground black pepper
- 50 grams all-purpose (plain) flour
- 150 ml sesame oil
- 2 tablespoon butter
- 2 small onion, finely chopped
- 2 small carrot, finely chopped
- 2 small stalk celery, finely chopped
- 750 grams peeled and chopped fresh or canned tomatoes
- 500 ml beef stock, if required
- Garlic mash, to serve
