GAMMON WITH APPLE

Gammon with apple is an exciting dish to eat. What makes this dish exciting is the mixture of potatoes, gammon, turnip, carrot and apple. To make it tasty, seasoned it with ground black pepper and salt. Sweet taste of apple just balance with the taste of gammon.

40 minutes

Cooking Time :
2 hours 10 minutes

Preparation Method :

  • Layer the potatoes, gammon, onion, garlic, turnip, carrot and apple in a bowl, seasoning with salt, pepper, sage and thyme as you go.
  • Pour over enough stock to just cover the filling. Cover the bowl with foil or greaseproof paper and tie down.
  • Place in a steamer or covered saucepan half-filled with boiling water and steam for 1 ½ hours.
  • Check the liquid level frequently and add more boiling water if necessary.
  • Remove the foil. Pour the cooking liquid carefully into a pan, leaving the meat and vegetables in the bowl.
  • Keep the food warm to one side. Boil the sauce to reduce to half of the original volume.
  • Taste and adjust seasoning it necessary. Pour the sauce over the food and garnish with thyme.
  • Serve hot.

INGREDIENTS

  • 1½ kg potatoes, peeled and thickly sliced
  • 1½ kg gammon, soaked and cut into bite- sized pieces, rind and fat removed
  • 2 large onion, peeled and sliced
  • 2 clove garlic, peeled and crushed
  • 4 turnips, peeled and quartered
  • 4 carrots, peeled and thickly sliced
  • 6 small cooking apples, peeled and thickly sliced
  • Salt
  • Freshly ground black pepper
  • 1 teaspoon chopped fresh sage
  • 1 teaspoon chopped fresh or pinch of dried thyme
  • 500 ml chicken stock
  • Thyme sprigs, to garnish
