RICE WITH MINCED LAMB

Preparation Method :
- Heat 2 tablespoon ghee in a thick-bottomed pan; fry the mince with red chilli powder, garlic paste, ginger, yoghurt, and onion paste till well browned.
- Add the spices with a little water. Put on dum and cook till the mince is tender and dry.
- Heat the remaining ghee for the rice in a separate pan; fry the onions till golden, drain and keep aside.
- Fry the rice and green gram or red gram with ginger. Add water and salt, boil till half done. Put on dum and cook till almost done.
- Spread the rice and green gram mixture over the mince, put the fried onions on top and cook on dum for another half hour. Sprinkle a little water or milk, if necessary. Blend well before serving.

- 250 grams Lamb mince
- 100 grams Rice
- 4 tablespoon Ghee
- 1 teaspoon Red chilli powder
- 1 teaspoon Garlic paste
- ½ " piece Ginger, grated
- 60 grams Yoghurt
- 1 tablespoon Onion paste
- ¼ teaspoon Black cumin seeds
- 1 teaspoon Coriander powder, freshly crushed
- A small pinch of each Cinnamon, cardamom and mace powders
- 30 grams Onions, thinly sliced
- 75 grams Split green gram, husked or Red gram
- Ginger grated ½ " piece
- Salt to taste
