MINCED LAMB WITH THYME FLOWERS

Minced lamb with thyme flowers might look appealing to children. For those who love to cook, this might just be another normal process for you. It is as easy as it looks like. Blending the lamb with thyme flowers will make it more aromatic and flavorful.

Preparation Method :

  • Blend the lamb in a blender or food processor for a few seconds. Slowly add the egg white, redcurrant jelly and thyme flowers and leaves.
  • Process for a few more seconds until they are fully incorporated into the meat.
  • Mix in the garlic, spring onion and corn flour; season well with salt and pepper. Dust your hands with corn flour and form the mixture into 1 inch balls.
  • Bring the stock to the boil in a saucepan. Place the meatballs, thyme sprigs and vegetables in a steamer.
  • Cover with a tight-fitting lid and steam over the boiling stock for 10 minutes.
  • Arrange the food on 4 warmed plates and keep warm. Boil the stock to reduce until syrupy.
  • Pour over the meatballs and vegetables.
  • Garnish with flowering thyme.

INGREDIENTS

  • 750 grams minced lean lamb
  • 2 egg white
  • 2 tablespoon redcurrant jelly
  • 1 teaspoon fresh thyme flowers and leaves from sprigs of thyme
  • 4 cloves garlic, peeled and crushed
  • 8 spring onions, trimmed and finely chopped
  • 2 teaspoon corn flour
  • Salt
  • Freshly ground black pepper
  • 500 ml lamb or beef stock
  • Sprigs of thyme
  • 15 baby carrots, scraped
  • 15 baby turnips, peeled
  • 100 grams mange tout, topped and tailed
  • 15 radishes, tailed
  • Sprigs of flowering thyme
