MINCED BEEF PARMENTIER

- Preheat the oven to Gas Mark 6/200°C/400°F.
- Spread half of the mashed potato over the bottom of a shallow ovenproof dish.
- Heat the oil in a large frying pan, add the onions and cook for 2 minutes.
- Add the tomatoes, cook for further 2 minutes, then add the seasoned beef.
- Blend it thoroughly and spoon onto the potato base.
- Cover with the remaining mashed potato, sprinkle with the Gruyere cheese and bake in the centre of the oven for 25 minutes.

- 500 grams creamy mashed potato, well seasoned
- 3 tablespoons cooking oil
- 2 peeled and finely chopped large onions
- 4 beef tomatoes, peeled, de-seeded and chopped
- 1 kg boiled or braised beef, finely minced and seasoned
- 75 grams Gruyere cheese, grated
