STIR-FRIED LIVER
Stir fried liver sounds simply, but elegant. This dish is exactly prepared during some occasions. It can help to nourish your body with the help of some refreshing vegetables added. If you want something new look and new taste, you can do this!

- Mix the ingredients for the marinade in a bowl. Add the liver slices and leave to marinate for 10 minutes.
- Bring the water to the boil, add the carrot and courgettes (zucchini) and boil for 3 minutes. Drain, reserving the water. Refresh the vegetables under cold water and reserve.
- Heat 5 tablespoons of the oil in a pan over a high heat. Add the liver and stir-fry very rapidly until it changes color and is firm. Transfer the liver to a plate.
- Heat the remaining oil in the pan and stir-fry the onion and ginger for 1 minute. Add the soy sauce, sugar, vinegar and sherry and bring to the boil.
- Return the liver to the pan with the water chestnuts and vegetables.
- Blend the corn flour (cornstarch) with 250 ml/8 fl oz (1 cup) of the reserved cooking liquid and stir into the pan. Simmer, stirring until thickened.
- Serve immediately with plain boiled rice.

- 500 grams lambs' liver, cut int ¼ inch thick slices
- 600 ml water
- 2 carrots cut into matchsticks
- 4 courgettes, diagonally sliced
- 14 tablespoons Cooking oil
- 2 onions cut into 8 pieces
- 4 slices root ginger, shredded
- 4 tablespoons soy sauce
- 2 teaspoon sugar
- 2 tablespoon red wine vinegar
- 2 tablespoon dry sherry
- 100 grams water chestnuts, drained and sliced
- 2 tablespoon corn flour
Marinade
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 4 teaspoons dry sherry
- 4 teaspoons corn flour
- 4 teaspoons Cooking oil
