- Remove the outer membrane from the liver and cut into strips about 1 cm/ ½ inch thick, discarding any veins.
- Crush the peppercorns with a pestle and mortar, or by placing between two sheets of plastic wrap and pounding with a rolling pin. Press the crushed peppercorns on to the liver.
- Heat the oil in a frying pan until a faint blue haze rises. Quickly sauté the liver slices, turning until lightly browned on all sides. (The secret of tender liver is not to overcook it.)
- As soon as the strips have lightly browned and stiffened, without being hard, they are done - about 3 minutes.
- Transfer at once to a heated serving plate, sprinkle with a little salt and finely chopped parsley.
- Serve with French Fried Onion Rings and a green vegetable or salad.
