CRISPY TOPPED LIVER
There are some who love liver dish; crispy topped liver is suitable for you. Its crispiness adds more taste to the liver. It is good to pair with boiled rice to make it socially creative. It’s not takes so much time in making crispy topped liver. It is usually great if you add more herbs and spices.

Preparation Method :
- Melt the margarine in a frying pan and stir-fry the liver for 6 to 8 minutes, until firm and brown.
- Remove from the pan with a slotted spoon and keep hot in a shallow flameproof dish.
- Add the onion, mushrooms and red pepper to the pan and sauté for 3 minutes. Stir in the breadcrumbs, herbs, beaten egg and salt and pepper to taste.
- Continue to cook, stirring, for 2 minutes. Spoon the mixture over the liver and cook under a preheated moderate grill (broiler) for 3 to 5 minutes until the topping is crisp and golden brown.
- Serve immediately with plain boiled rice.

- 50 grams margarine
- 500 grams lambs' liver, sliced
- 2 small onion, chopped
- 100 grams mushrooms, chopped
- 1 red pepper, cored, seeded and chopped
- 80 grams fresh breadcrumbs
- 2 teaspoon dried mixed herbs
- 2 eggs, beaten
- Salt and freshly ground pepper
- Parsley sprigs to garnish
