SLOW-ROASTED SPICED LAMB

Preparation Method :
- Preheat the oven to 425°F (220°C/gas 7). Make small incisions in the lamb. Combine the butter, garlic, paprika, cumin, coriander, cinnamon, salt, black pepper, and cayenne pepper in a small bowl.
- Rub the spiced butter over the lamb, forcing it into the incisions.
- Place the lamb in a large roasting pan and pour in the water. Bake on the top shelf for 20 minutes.
- Move the lamb to the middle shelf, reduce the heat to 300°F (150°C/gas 2), and bake for about 4 hours, until the meat is falling off the bone.
- Baste with the pan juices every 15 minutes to keep moist. Remove from the oven, cover with foil, and let rest for 15 minutes. Serve hot.
