ROAST LAMB WITH POTATOES

Preparation Method :
- Grease 27cm x 34cm baking dish. Combine onion, crushed garlic and herbs in bowl; mix well.
- Place half of the potatoes over base of prepared dish, sprinkle with onion and herb mixture, top with remaining potatoes, dot with butter; add water. Bake in hot oven for 1 hour.
- Cut 3 small slits in top of lamb, push a clove of extra garlic into each slit.
- Place lamb in baking dish on top of potatoes, bake in moderate oven further 1 hours or until cooked as desired.
- Turn lamb halfway through cooking. Remove lamb from baking dish to heatproof plate, cover with foil, rest lamb 10 minutes before carving.
- Keep potatoes warm in oven while lamb is resting.

- 200 grams onion, chopped
- 2 cloves garlic, crushed
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh thyme
- 1.5 kg Old Potatoes, peeled, sliced
- 50 grams butter, chopped
- 250 ml water
- 2 kg leg of lamb
- 3 cloves garlic, extra
