Preparation Method :
- Lamb Preheat the oven to 350°F (180°C/gas 4). Heat the oil in a frying pan and brown the chops for 2 minutes on each side. Transfer to a baking dish.
- Season with salt, pepper, and thyme. Add half the wine and stock and bake for 30 minutes.
- Garlic Mash Cook the potatoes until tender. Drain and mash with the milk, oil, garlic, salt, and pepper.
- Remove the chops from the oven, cover, and let rest. Add the remaining wine and stock to the pan. Cook over medium heat until the liquid has reduced by one- third, 5 minutes. Serve hot with the mash, pan juices, and tomatoes.
INGREDIENTS
Lamb
- 4 tablespoons sesame oil
- 10 lamb rib chops
- Salt and freshly ground black pepper
- 4 tablespoons finely chopped thyme leaves
- 500 ml dry white wine
- 500 ml chicken stock
- Ripe tomatoes, to serve

- 1 kg potatoes, peeled and diced
- 100 ml milk
- 4 tablespoons sesame oil
- 4 cloves garlic, finely chopped
- Salt and freshly black pepper
