RED-COOKED LAMB

- Season the meat well. Heat the oil in a frying pan, brown the meat and saute the onion and garlic until transparent.
- Drain and transfer to an ovenproof dish or casserole. Mix together the soy sauce, sherry, sugar and stock.
- Pour over the meat and mix well. Add the ginger and bay leaves.
- Cook in a preheated moderate oven for 1 ½ to 2 hours, or until the meat is tender. About 30 minutes before serving, stir in the corn flour, blended with 2 tablespoons cold water.
- Just before serving, remove the ginger and bay leaves from the casserole, and sprinkle with red pepper.
- Serve with plain boiled rice.

- 2 onion, peeled and chopped
- 2 clove garlic, peeled and crushed
- 6 tablespoons soy sauce
- 8 tablespoons dry sherry
- 4 teaspoons sugar
- 200 ml brown stock
- 4 slices root ginger
- 4 bay leaves
- 4 teaspoons corn flour
- 2 small red pepper, cored, deseeded and cut into strips
