POTATO AND LAMB CROQUETTES

Preparation Method :

  • Boil, steam or microwave potatoes are until tender; drain, mash.
  • Place bulgur wheat in heatproof bowl, cover with boiling water, stand 15 minutes.
  • Drain bulgur wheat, rinse under cold water, drain well.
  • Pat dry with absorbent paper.
  • Heat oil in pan; add garlic, mince, onion and carrot, cook, stirring, until mince is browned.
  • Stir in potato, bulgur wheat, egg, thyme and cumin; mix well.
  • Divide mixture into 12 portions, shape into croquettes, roll in breadcrumbs. Refrigerate 30 minutes or until firm.
  • Heat extra oil in pan, cook croquettes in batches until browned; drain on absorbent paper.
  • Serve with yogurt mint sauce.

Yogurt Mint Sauce:

  • Combine all ingredients in bowl: mix well.

  • 500 grams potatoes, peeled, chopped
  • 50 grams bulgur wheat
  • 200 ml peanut oil
  • 1 clove garlic, crushed
  • 250 grams minced lamb
  • 100 grams onion, chopped
  • 150 grams carrot, grated
  • 1 egg, lightly beaten
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon ground cumin
  • 50 grams packaged breadcrumbs, approximately

Yogurt Mint Sauce

  • 125 ml plain yogurt
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice
