LAMB TAGINE WITH RAISINS, HONEY & ALMONDS

Preparation Method :

  • Heat the oil and butter in the same pan over medium- high heat. Add the ginger, salt, pepper, turmeric, grated onion, and garlic. Sauté for 30 seconds.
  • Add the lamb, chopped onions, and honey. Pour in enough water to just cover the meat. Cover and simmer over low heat until the meat is almost tender, 2 hours.
  • After the stew has been cooking for 1 hour, soak the raisins and apricots in a ladleful of the cooking liquid, the lemon juice, and a little hot water. Let soften for 30 minutes.
  • Add the fruit mixture and cinnamon. Cover and simmer until the lamb is completely tender. Sprinkle with almonds and cilantro. Serve hot with couscous.

INGREDIENTS

  • 100 ml sesame oil
  • 5 tablespoons butter
  • 3 teaspoons ground ginger
  • Salt and white pepper
  • 1 teaspoon ground turmeric
  • 5 onions, chopped
  • 5 cloves garlic, finely chopped
  • 1.5 kg lamb, cut into small chunks
  • 2 tablespoon honey
  • 150 grams raisins
  • 150 grams dried apricots
  • Juice of 1 lemon
  • 2 cinnamon stick
  • 50 grams flaked almonds, toasted, to garnish
  • Fresh cilantro (coriander)
  • Freshly cooked couscous
