Preparation Method :
- Boil, steam or microwave potatoes are until tender; drain, mash.
- Combine potatoes, mince, breadcrumbs, egg, nuts, seeds, cinnamon, cardamom and raisins in bowl; mix well.
- Divide mixture into 24 portions, shape into sausages about 9cm long, thread onto skewers.
- Heat oil in pan, cook kofta in batches until well browned and cooked through.
- Serve with tomato sauce, and sprinkled with extra pine nuts, if desired.
- Tomato Sauce: Blend or process tomatoes until smooth.
- Heat butter in pan, add onion and garlic, cook, stirring, until onion is soft.
- Add pureed tomatoes, cumin and parsley, cook, stirring, until hot.
INGREDIENTS
- 600 grams Old Potatoes, peeled, chopped
- 750 grams minced lamb
- 50 grams stale breadcrumbs
- 1 egg, lightly beaten
- 40 grams pine nuts, toasted
- 1 teaspoon cumin seeds
- ½ teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- 50 grams raisins, chopped
- 2 tablespoons Peanut oil
Tomato Sauce
- 500 grams can tomatoes
- 20 grams butter
- 150 grams onion, chopped
- 1 clove garlic, crushed
- 1 teaspoon ground cumin
- 1 tablespoon chopped fresh parsley
