KOFTA

Preparation Method :

  • Boil, steam or microwave potatoes are until tender; drain, mash.
  • Combine potatoes, mince, breadcrumbs, egg, nuts, seeds, cinnamon, cardamom and raisins in bowl; mix well.
  • Divide mixture into 24 portions, shape into sausages about 9cm long, thread onto skewers.
  • Heat oil in pan, cook kofta in batches until well browned and cooked through.
  • Serve with tomato sauce, and sprinkled with extra pine nuts, if desired.
  • Tomato Sauce: Blend or process tomatoes until smooth.
  • Heat butter in pan, add onion and garlic, cook, stirring, until onion is soft.
  • Add pureed tomatoes, cumin and parsley, cook, stirring, until hot.

 

INGREDIENTS

  • 600 grams Old Potatoes, peeled, chopped
  • 750 grams minced lamb
  • 50 grams stale breadcrumbs
  • 1 egg, lightly beaten
  • 40 grams pine nuts, toasted
  • 1 teaspoon cumin seeds
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 50 grams raisins, chopped
  • 2 tablespoons Peanut oil

Tomato Sauce

  • 500 grams can tomatoes
  • 20 grams butter
  • 150 grams onion, chopped
  • 1 clove garlic, crushed
  • 1 teaspoon ground cumin
  • 1 tablespoon chopped fresh parsley
