SURF & TURF KEBABS

The surf and turf kebabs are cooked with oyster, fillet of beef, clarified butter, fresh lime juice, scallops and other added components. This delicious dish is ideal for lunch or dinner. Preparing this menu is awfully simple because of its accessible ingredients.

Preparation Method :

  • Place the ingredients in a large bowl and leave them in the fridge to marinate for 24 hours.
  • Soak 8 wooden or bamboo skewers in water for at least 15 minutes.
  • Place a piece of fillet, king prawn, scallop and oyster on each skewer, finishing with a piece of fillet steak.
  • Barbecue it for 4 minutes, basting with the marinade and then season it again with black pepper, then serve the kebabs.

INGREDIENTS

  • 900 grams fillet of beef, cut into 2.5cm cubes
  • 500 grams uncooked king prawns, shells removed
  • 25 scallops, shells removed
  • 25 oysters, shells removed
  • 3 tablespoons oyster sauce
  • 4 tablespoons fresh lime juice
  • 60 grams clarified butter
  • 1 tablespoon sherry vinegar
  • 3 tablespoons IDHAYAM sesame oil
  • Freshly ground black pepper (to taste)
