KIDNEY KEBABS WITH BARBECUE SAUCE

Kidney kebabs with barbecue sauce are perfect in outing with your family and friends. They will surely love it! In preparing these kidney kebabs it only needs such as, lemon juice, tomato ketchup, lambs kidney, onions and sauce.

25 minutes

Preparation Method :

  • Cook the onions in boiling salted water for 4 minutes, then drain. Remove the rind from the bacon; stretch each rasher (slice) on a board with the back of a knife, then cut in half.
  • Roll up each piece of bacon. Halve the kidneys and remove the cores.
  • Thread the onions, bacon, kidneys and sausages onto two oiled skewers. Mix the baste ingredients together and brush over the kebabs.
  • Cook under a preheated moderate grill (broiler) for 5 minutes on each side. Brush with the baste while cooking.
  • To make the sauce: melt the butter in a pan and gently fry the onion for 5 minutes. Add the tomato ketchup, Worcestershire sauce, honey, lemon juice and salt and pepper to taste.
  • Bring to the boil and then simmer for 5 minutes. Arrange the kebabs on a bed of rice.
  • Serve with the sauce and a crisp green salad.

INGREDIENTS

  • 8 small onions 
  • 8 streaky bacon rashers 
  • 8 lambs' kidneys 
  • 4 chipolata sausages, halved 

Baste

  • 2 teaspoon tomato puree 
  • 2 teaspoon Worcestershire sauce 
  • 4 teaspoons Cooking oil

Sauce

  • 30 grams butter 
  • 3 small onion, finely chopped 
  • 4 tablespoons tomato ketchup 
  • 2 tablespoon Worcestershire sauce 
  • 2 tablespoon clear honey 
  • 2 tablespoon lemon juice 
  • Salt and freshly ground pepper
