QUICK-FRIED BEEF IN OYSTER SAUCE

- Slice the carrots and celery stalks diagonally.
- Heat the oil in a wok or frying pan, add the spring onions and garlic and fry quickly for about 30 seconds.
- Add the carrots and celery and stir-fry for 1 minute.
- Cut the steak into thin slices and sprinkle with salt. Add to the pan and fry until browned on all sides.
- Stir in the bean-sprouts, soy sauce, sherry and oyster sauce and cook for 2 minutes.
- Spoon the mixture on to a serving dish.
- Garnish with the carrot flower and celery leaves.

- 6 tablespoons oyster sauce
