Preparation Method :
- Place all the ingredients for the korma paste in a blender or food processor and thoroughly blend it together until you get a very smooth paste.
- Coat the beef with the mixture, cover and place in the fridge for 6 hours.
- Slowly simmer the meat in a large saucepan, adding a little more beef stock if required.
- Simmer for 35 minutes, add the cream and garam masala and simmer for a further 30 minutes.
- Allow the korma to stand for 10 minutes before serving.
INGREDIENTS
- 900 grams rump steak, cut into 2.5cm cubes
- 275 ml double cream
- ½ teaspoon garam masala
For the korma paste
- 6 cloves garlic, peeled
- A 2.5 cm piece fresh root ginger, peeled and coarsely chopped
- 50 grams blanched almonds
- 6 tablespoons Basic Beef Stock
- 1 teaspoon ground cardamom
- 4 cloves, crushed
- 1 teaspoon ground cinnamon
- 2 large onions, peeled and chopped
- 1 teaspoon coriander seeds
- 2 teaspoons ground cumin a pinch of cayenne
- Salt and freshly ground black pepper (to taste)
- 6 tablespoons Cooking oil
