MEAT BALLS IN TOMATO SAUCE
There are many kinds of meat ball’s sauce like sweet and sour or meat balls with red wine but this kind of sauce is a majorities’ favourite. Tomatoes have lycopene and other minerals to improve your body immunity and prevent cancer. There are many kind of ingredient you can use. Here are some tips for choosing eligible ingredients. Brown breadcrumbs, milk, butter, whole meal flour, beef stock, chopped tomatoes, tomato puree, sugar, finely chopped fresh tarragon.

Preparation Method :
- Preheat the oven to Gas Mark 4/180°C/350°F.
- Place the breadcrumbs in a bowl, add the milk and leave the breadcrumbs to soak for atleast 30 minutes.
- Put half the butter in a saucepan, add the flour and cook, stir it continously for 2 minutes, let not the mixture burn.
- 0Stir in the beef stock and cook it for further 5-10 minutes.
- Add the tomatoes, tomato puree, sugar and chopped tarragon.
- Season well and simmer for half an hour.
- Add the chopped onion, minced beef and paprika to the breadcrumbs, and mix it thoroughly. Season with a little salt and pepper.
- Using floured hands, shape the beef into 14 large meat balls.
- Heat the beef dripping and the remaining butter in a large frying pan, add the meat balls and cook until they are brown all over.
- Place the meat balls in a deep casserole dish, pour over the tomato sauce, cover and bake in the centre of the oven for 25 minutes.
- Remove the meat balls from the oven, allow them to cool atleast for 5 minutes, garnish it with the sprigs of fresh tarragon and then serve.

- 250 grams brown breadcrumbs
- 150 ml milk
- 50 grams of butter
- 50 grams whole meal flour
- 200 ml Basic Beef Stock
- 500 gram tin chopped tomatoes
- 3 tablespoons tomato puree
- 1 teaspoon sugar
- 1 tablespoon finely chopped fresh tarragon
- Salt and freshly ground black pepper (to taste)
- 1 large onion, peeled and chopped
- 450 grams minced rump steak
- 1 teaspoon of paprika
- 50 grams beef dripping
- A few whole sprigs of fresh tarragon
