INDONESIAN BEEF CURRY

Preparation Method :
- Spice Paste Put all the spice paste ingredients in a large mortar and pestle or food processor and grind to make a smooth paste.
- Curry Place a saucepan over medium heat. Add the spice paste and cook until fragrant, about 30 seconds. Add the beef, lemongrass, and cinnamon and sauté until coated.
- Add the coconut milk and sugar, and bring to a boil. Simmer on low heat, uncovered, until the liquid has evaporated, leaving the meat to fry in the oil that remains, about 2 hours.
- Remove the lemongrass and cinnamon and season with salt. Serve hot with rice.

Spice Paste
- 100 grams shredded coconut, lightly toasted
- 6 shallots, coarsely chopped
- 8 long red chillis, seeded and finely chopped
- 4 cloves garlic, chopped
- 4 teaspoons finely grated ginger
- 4 teaspoons ground coriander
- 4 teaspoons ground cumin
- 2 teaspoon ground turmeric
- 5 tablespoons sesame oil
Curry
- 2 kg braising steak, cut into small chunks
- 4 stalks lemongrass
- 2 cinnamon stick
- 2 liter canned coconut milk
- 2 tablespoon brown sugar
- Salt to taste
- Freshly cooked basmati rice
