CARDAMOM LAMB CURRY WITH ALMONDS

Preparation Method :
- Curry Paste Pound the garlic with the chillis, onion, and salt with a mortar and pestle. Mix in the cardamom and water to make a smooth paste. Set aside.
- Lamb Curry Heat the butter and oil in a large saucepan over medium heat. Add the cardamom pods and cinnamon stick and stir for 10 seconds to release their flavour. Add the curry paste and sauté for 5 minutes.
- Add the lamb and sauté until browned, 10 minutes. Season with salt. Stir in the yogurt and enough water to just cover the meat. Cover the pan.
- Simmer over low heat for 2 hours. Uncover and cook for 15 minutes, until the sauce is well reduced. Pour in the cream.
- Bring to a boil, and season with salt and white pepper. Garnish with cilantro and flaked almonds. Serve hot.

- 4 cloves garlic, finely chopped
- 4 green chillis, finely chopped
- 2 onions, finely chopped
- 1 teaspoon salt
- 2 teaspoon ground cardamom
- 2 teaspoon water
Lamb Curry
- 3 tablespoons butter
- 2 tablespoon sesame oil
- 6 cardamom pods, crushed
- 2 small cinnamon stick
- 1 kg leg of lamb, cut into small cubes
- Salt to taste
- 3 tablespoons plain yogurt
- Water as needed
- 250 ml cream
- Freshly ground white pepper
- 2 tablespoon fresh cilantro (coriander) leaves
- 2 tablespoon flaked almonds, toasted
