BEEF IN BLACK BEAN SAUCE

Preparation Method :
- Cut steak into 2 inch long strips and place in a bowl with salt, baking soda, water, egg white and cornflour.
- Mix well to combine, cover and refrigerate at least for an hour.
- Heat 1 tablespoon oil in a frying pan and stir fry beef until well browned. Remove from pan and set aside.
- Add onion and green pepper and stir fry until golden. Remove and set aside with beef.
- Drain black beans, crush to a paste with the garlic. Heat a little more oil in the pan, add paste and stir fry for 1 minute.
- Return beef and onion mixture to pan and stir well to combine.
- To make sauce combine soy sauce, sherry with sugar, cornflour and water, pour into pan and cook for 2 more minutes.
- Season to taste with salt and black pepper. Serve with rice.

- 500 grams lean rump steak
